Banana-Raisin Coffee Cake

 2 cups Prospectors Whole Wheat Bakin’ Starter
 3 Ripe Bananas, mashed
 0.50 cup Raisins
 2 tsp Ground Cinnamon
 0.75 cup Brown Sugar- sprinkle some on top
 4 tbsp Butter
 0.75 cup COLD Water
 Dash Salt

COMBINE ingredients in a large bowl. MIX thoroughly.
Lightly grease a GSI Outdoors Hard Anodized Dutch Oven, place mixture in Dutch Oven and spread to the edges and top with raisins and brown sugar.
Sprinkle top with Cinnamon, cover, and place in the coals (apx. 425° F) and check in 18-20 minutes and cook until browned to your desire.
Yields: 10- 2" x 4" pieces
